Slice the green ice lettuce into manageable portions depending on bun size. Soak lettuce in an ice bath (cold water with ice) to keep it crisp. Prepare the hotdogs: Use a variety of hotdogs: Jumbo, Jumbo Cheese Dog, King Size, and Giant. Slice the hotdogs lengthwise (score lightly) to ensure even cooking. Heat oil in a pan and fry the hotdogs until fully cooked and browned. Set aside. Prepare the hotdog buns: Slice the buns if not pre-sliced. You may lightly toast or warm them, depending on your preference. Assemble the sandwich: Place a layer of crispy lettuce inside each bun. Add 3–4 slices of cucumber on top of the lettuce. Place your chosen cooked hotdog (Jumbo, Cheese, King Size, or Giant) inside the bun. Add mayo and ketchup over the hotdog. Optional: ask your customer if they want veggies or not. Add the cheese topping: Grate the cheese over the top of the hotdog to finish the “overload” look. You can melt the cheese slightly or serve it fresh depending on your presentation style.
